MERLUZZO ALL’AFFUMICATURA DI PIGNA, IN SALSA DI AGRUMI



Ingredienti per quattro persone:



1 filetto di merluzzo da 500 gr

1 pigna

sale e zucchero q.b.

1 arancia

olio extravergine q.b.

basilico a piacere

sale

50 g patè di olive nere

crostino di pane



Procedimento



Marinare il filetto di merluzzo con sale e zucchero per 2 ore, lavarlo e poi affumicarlo in forno a temperatura bassissima con la pigna bruciata per circa mezz’ora.



Salsa di agrumi:

24 g cipollotti

100 g olio

240 g arancia pelata

45 g canditi

150 g acqua

sale e pepe



Procedimento



In una pentola aggiungere olio cipollotto soffrigere, aggiungere le arance, l’acqua sale e pepe e canditi farli ridurre.

Frullare con un termomix



Chissa' se si trovano ancora arance degne di questo nome... 8-)
