Rendo merito con questa foto ad un valente norcino della mia zona, il signor Francesco Chisari (CF sono le sue iniziali...) che, a Belpasso, produce salame, prosciutto crudo (che vedete anche loro in foto...) e, per l'appunto, pancetta. E' bravissimo ad usare il sale e compie lui tutto il ciclo di stagionatura. La pancetta viene salata, rifilata, poi cucita e infine pressata tra due mezzi tronchi di castagno. Produce, anche, della strepitosa salsiccia secca...
