Ingredienti per 4 persone

4 carciofi
3 spicchi d'aglio
un ciuffo di prezzemolo
200 grammi di ricotta
400 grammi di pasta tipo Casarecce


Preparazione

Sbucciare i carciofi privandoli di tutte le foglie più dure fino ad arrivare alla parte più tenera, eliminare le punte e tagliarli a spicchi togliendo la barba interna, metterli a bagno in acqua acidulata con succo di limone per impedire che anneriscano.



Affettarli poi finemente:



E versarli in una padella dove sono stati precedentemente rosolati in olio tre o quattro spicchi di aglio.
Aggiungere un mestolo di acqua calda o brodo vegetale e a metà cottura aggiungere il prezzemolo grossolanamente tritato.
Cuocere finchè diventano teneri:



Stemperare la ricotta direttamente nella padella, amalgamandola con i carciofi, fino ad ottenere una crema morbida, aggiungendo se è il caso un mestolo di acqua di cottura della pasta:



Quando la pasta è cotta versarla nella padella, mescolare e aggiungere a fuoco spento abbondante parmigiano grattugiato.
