Ingredienti per 1 persona

1 zucchina
1 peperone (ho usato un po di falde rosse e gialle)
spezie (varie per verdure grigliate)
pomodorini
1 cucchiaio albume
2 cucchiaini pane grattugiato
pizzico di sale
3 bastoncini di legno per spiedi

Tagliate le zucchine nel senso della lunghezza. Salate e mettete a perdere la loro acqua, così si ammorbidiscono e si arrotolano meglio.
Dopo 1 ora lavatele e asciugatele, appoggiare sopra ad ogni striscia di zucchina una falda di peperone e infilzare sul bastoncini alternando con un pomodorino.
Mettere in una teglia NON unta. Cospargere di spezie e infornare per 20 minuti a 180 gradi.

Nel frattempo sbattete bene 1 cucchiaio di albume con un pizzico di sale e 2 cucchiaini di pane grattugiato.
Togliere la teglia e accendere il grill. Cospargere l'albume sbattuto sopra gli spiedi e infornare sotto il grill per 10 minuti.
