Ingredienti
2 sogliole sfilettate
2 cucchiai di olio evo
cipolla tritata fine
uno spicchio di aglio
qualche cucchiaio di acqua
3 cucchiai di pomodoro pelato o polpa pronta (in estate metto
3 patate medie (lesse a metà cottura)
un po'di prezzemolo tritato,
un cucchiaio scarso di pane grattugiato
pepe macinato fresco
per 2 persone

Lessare le patate fino a metà cottura,lasciare che si raffreddano ed affettarle sottili,disporne metà in una pirofila che avremo unto leggermente con olio evo,cosparso con 1/2 cucchiaio di pan grattato,e prezzemolo tritato.
Sulle patate affettate disporre i filetti di sogliola,aggiungere il sale e un pò di pepe,ricoprire i filetti con le altre patate,il pomodoro,della cipollina fresca tritata, l'aglio,sale pepe, prezzemolo e l'olio,mettere in forno a gratinare a 220° per 10m. circa
Volendo possiamo aggiungere nell'intingolo del pomodoro qualche cappero e olive.
