Ho fatto le sfogliatelle e volevo farvi vedere due foto e un consiglio per il ripieno.
Dopo aver provato quello suggerito sul sito ho deciso di cambiare le dosi.
Questo è quello che consiglio:

1/2 litro d'acqua
4 gr di sale
150 gr di Semola
250 gr di ricotta
250 gr di zucchero a velo
1 uovo
1 cucchiaino raso di cannella
40 gr di cedro
40 gr di scorze di arancia candite
1 busta di vanillina

fare bollire acqua e sale, poi aggiungere il semolino a farlo cuore per 3-5 minuti. Fare raffreddare

A parte unire la ricotta allo zucchero a velo, cannella e vanillina.

Poi unire il composto al semolino, aggiungere l'uovo leggermente sbattutto ed infine i canditi.
