250g di farina 15g. di burro 15g. di strutto 150g. di latte freddo 1 cucchiaino raso di sale Per il ripieno:
1kg. di biete-erbette 80g. di pancetta stesa 80g. di grana 2 cucchiai di prezzemolo 1 uovo 1 spicchio piccolo di aglio sale/pepe/olio extravergine di oliva
Lessare le erbette, scolarle, strizzarle bene e trita
Impastare velocemente finchè ben amalgamata poi far riposare in frigo mezzora.In una padella scaldare 3 cucchiai di olio, unire la pancetta tagliata sottile e corta, farla rosolare un attimo.Poi aggiungere l’aglio tritato e le erbette e far insaporire per 6/7 minuti. Far raffreddare in una ciotola, poi unire il grana, l’uovo, il prezzemolo e il pepe, amalgamare ed eventualmente correggere di sale.
Dividere la pasta in due, una parte leggermente più grandeTirare sottile il pezzo più grande in un disco di circa 30cm, adagiarlo sopra carta forno, distribuirci il ripieno.Coprire col secondo disco di sfoglia.Rigirare e sigillare i bordi, se occorre allungare un attimo il disco superiore.Spennellare con poco olio e pizzicarla qui e là con la punta delle dita sollevandola leggermente dopo averla fissata bene alla sfoglia sottostante. Attenzione perché si buca facilmente. Cuocere i forno a 200° per 30/40 minuti
