Ingredienti per 4 persone:

700g patate a pasta gialla
200g funghi coltivati
½ bicchiere di vino bianco
Pecorino grattugiato q.b.
Pangrattato
Prezzemolo
Olio evo

Procedimento:

•Pelare le patate e immergerle subito in acqua
•Pulire bene i funghi ed affettarli non troppo fini
•Cuocere i funghi con il prezzemolo in un filo d’olio a fuoco vivo facendoli “bruciacchiare” leggermente, e nel finale sfumare con il vino bianco
•Tagliare le patate a fettine non troppo sottili per ritrovare la loro consistenza nel piatto finito (quindi non con la mandolina), e cuocere in un filo d’olio a fuoco elevato
•Iniziare a formare strati di patate/funghi/pecorino all’interno dell’anello messo su carta da forno fino a riempirlo, e all’ultimo strato aggiungere anche il pangrattato.
•Infornare a 220° per qualche istante, giusto il tempo necessario a far sciogliere il pecorino
