Per 6 persone:

6 pere Martin Sec
mezza bottiglia di un buon vino rosso
il succo di mezzo limone
120 g di zucchero
una stecca di cannella
3 chiodi di garofano

Ho sbollentato le pere per 5 minuti in sola acqua. In una casseruola ho versato il vino ed il succo di limone, ho aggiunto le pere e le ho lasciate marinare per 30 minuti. Ho tolto le pere, messo la casseruola sul fuoco, aggiunto lo zucchero e le spezie e portato ad ebollizione. Ho aggiunto le pere e le ho fatte cuocere per circa 15 minuti. Devono rimanere sode e compatte. A fine cottura ho tolto le pere e fatto ridurre il vino fino ad ottenere uno sciroppo denso.

Ho tagliato la calottina inferiore delle pere per farle stare dritte sul piatto, guarnito con lo sciroppo e decorato con lastrine di glucosio caramellato in forno a 200°C.
