Semplice ma gustoso da morire.

Flan parisien

1 litro di latte
250 di zucchero
5 uova intere
100 gr di amido di mais
250 gr di panna fresca
1 bacca di vaniglia

pasta sfoglia

Accendere il forno a 170°C.
Imburrare ed infarinare uno stampo di circa 26 cm di diametro.Io ho usato una fascia in metallo.
Rivestire con la pasta sfoglia e mettere di nuovo in frigo.
Far bollire 900 gr di latte con 125 gr di zucchero e la vaniglia.
Montare non eccessivamente le uova con i restanti 125 gr di zucchero.Aggiungere la maizena setacciata e quindi i 100 gr di latte freddo. Quindi, ultimare con il restante latte aggiunto lentamente e far cuocere a fuoco basso come una pasticciera. Far leggermente freddare e aggiungere la panna liquida fresca.Far scendere di temperatura ed eliminare la bacca di vaniglia.
Versare nello stampo all'interno dell'involucro di sfoglia e infornare per circa un'ora.
