x 4 persone:

2oo g un buon cioccolato al 43-50% max 60%
3 uova
2 cucchiai di zucchero (se usate un 60% anche 3)
un pizzichino piccolo di sale
60 ml latte o acqua

sciogliere il cioccolato con il latte o l'acqua a bagnomaria e lasciar intiepidire.
Montare le uova con lo zucchero il sale e 2 cucchiai di acqua a bagnomaria (delicato) con uno sbattitore finchè triplica di volume per almeno 5 min,

poi togliere dal bagnomaria continuando a sbattere ancora per qualche minuto.
Aggiungere le uova al cioccolato (e non il contrario!!) mescolando delicatissimamente con una spatola ( assolutamente no con lo sbattitore !!) dall'alto verso il basso.Mettere in frigo x 3 ore e toglierla solo al momento di servirla in tavola.
A piacere si può aggiungere del liquore o del caffè e vanno aggiunti al cioccolato fuso.
