Zürcher Geschnetzeltes - Vitello alla zurighese*

Ingredienti:
2 cucchiai di olio evo
500 g di vitello tagliato a striscioline non eccessivamente sottili
un pizzico di farina
sale e pepe

1 cucchiaio di olio evo
1 cipolla piccola tritata
200 g di funghi (champignon) tagliati a fettine
1 cucchiaio di succo di limone
100 ml di vino bianco
100 ml di brodo di carne (o acqua)
180 g di panna
1 cucchiaio di amido di mais (opzionale)
prezzemolo tritati

Procedimento:
Cuocere in padella con l'olio le striscioline di vitello. Salarle, peparle e aggiungere un pizzico di farina.
Quando sono cotte toglierle dalla padella e lasciarle in caldo.

Preparare la salsa nel seguente modo.
Mettere nella padella dove si è cotta la carne il funghi e la cipolla, e cuocerli leggermente. Aggiungere quindi il limone e il vino e far ritirare la salsa della metà. A parte mescolare il brodo con la panna e l'amido, quindi aggiungerli ai funghi e continuare a cuocere per circa 3 minuti.

Aggiungere la carne, salare e pepare e continuare a cuocere fino ad ottenere una crema vellutata.
Servire e spolverare con del prezzemolo tritato. Si accompagna a del rösti (prossimamente)
