Per 6 cucchiai

12 asparagi novelli

3 uova di quaglia
120 gr bocconcini di mozzarella o di ricotta o di tofu
1 cucchiaio di semi di sesamo tostato
Olio, pepe, sale

Sbollentare gli asparagi, scolarli, tagliare le punte e tenerle da parte; frullare i gambi con un po’ di acqua di cottura fino ad ottenere una crema piuttosto densa; passarla al setaccio (non occorre se si ha il bimby), condirla con sale, pepe, olio. Frullare la mozzarella con un po’ di acqua calda, un filo di olio, sale pepe. (Io ho usato la ricotta, senza frullarla. Tofu per Azabel).
Cuocere le uova di quaglia per 3 o 4 minuti, sgusciarle. Comporre i cucchiai con le 2 creme, la punta d’asparago, l’uovo di quaglia tagliato a metà, un pizzico di semi di sesamo tostati.
Ho apprezzato l'armonia dei sapori e la freschezza; secondo me si possono anche preparare nei bicchierini
