Dalle mie parti in questo periodo le fave abbondano esageratamente,la settimana scorsa al mercato le vendevano 2,5kg a 1 euro!
Ho usato il mixer perchè non ho il mortaio,ma non ho ridotto a crema,ho lasciato un po' grossolano il pesto e al posto del pecorido sardo ho usato un cacioricotta di capra.
Buono e delicato,forse col pecorino sarebbe venuto più marcato come gusto,ma come prova è andata bene.
Ci ho condito delle trofie,da ripetere :)

200 gr di fave fresche già sgranate,
25 gr di mandorle,
50 gr di pecorino sardo stagionato,
olio extravergine di oliva.

PROCEDIMENTO
Pelare le fave in modo da asportare completamente la loro pellicina esterna e pestarle nel mortaio, insieme alle mandorle, in modo da ridurle in una crema piuttosto morbida. Aggiungere quindi il formaggio grattugiato ed emulsionare con abbondante olio extravergine di oliva.

Al momento di condire la pasta, diluire con qualche cucchiaio della sua acqua di cottura.
