Ingredienti x 2:
350g petto di pollo a cubetti di circa 3cm
rum (se possibile della Martinica)
miscela di spezie "colombo" (oppure un curry "leggero")
mezza tazza di latte di cocco
mezza cipolla
olio di semi (oppure d'oliva ma leggerissimo)
riso "profumato" per accomagnare, bollito e scondito

Rosolare la cipolla nell'olio, aggiungere il pollo, poi sfumare col rum (la quantità l'ho fatta a occhio :roll: ).
Aggiungere il latte di cocco e due bei cucchiaini di spezie. Completare la cottura.
Abbondare con il latte di cocco non guasta, perché la salsina condisce perfettamente il riso.
Io ho servito il riso SOTTO al pollo.

P.S.: ho trovato una descrizione del colombo: "Il colombo é un melange di spezie: coriandolo, peperoncino, zenzero, cumino, pepe nero, riso tostato sono ridotti in una polvere molto simile al curry indiano, usata per piatti di carne o pesce che ne prendono il nome (colombo poulet, colombo de cabri, de poisson)"
