Ingredienti per 2 persone
3 calamari - semola di grano duro - buccia di limone grattugiata - miscela di alghe essiccate tritate - olio di semi di arachide per friggere - sale
Per la salsa allo zafferano : 10 pistilli di zafferano - 30 ml. di buon aceto di vino bianco (io ho usato quello di Arneis) - 80 ml. brodo di pesce (o vegetale) - sale - un cucchiaio raso di miele di acacia - fecola la punta di un cucchiaino (per addensare) - pepe bianco

Procedimento
Per la salsa allo zafferano : fate caramellare il miele in un pentolino. Quindi sfumatelo con l'aceto di vino bianco e fate cuocere per 2 minuti (vosì che evaporino un pò i vapori). A questo punto unite il brodo, portate a bollore e fate ridurre per altri 5 minuti circa a tegame scoperto. Addensate con un cucchiaino di fecola sciolta in un cucchiaio di acqua fredda. Regolate di sale ed unite lo zafferano spezzettato e il pepe bianco macinato. Cuocete ancora per qualche istante, fino ad ottenere la densità desiderata; togliete dal fuoco per far raffreddare.
Pulite i calamari e tagliateli ad anelli. Lavateli in acqua fredda (se poi li ammollate in acqua e ghiaccio per qualche minuto prima di friggerli è meglio) ed asciugateli molto grossolanamente. Amalgamate la semola setacciata con le alghe tritate e la buccia di limone; impanatevi i calamari e friggeteli velocemente in abbondante olio caldo. Scolateli dopo 1-2 minuti (se li cuocete troppo diventano duri) ed asciugateli su carta assorbente. Serviteli caldi, dopo averli salati, con la salsa allo zafferano.
