Dosi e procedimento per due portate:

Ho iniziato col preparare la pasta.
Ero indeciso se farla all'uovo o meno, di grano duro o no, insomma, sapete che ho fatto?

Ho pesato un uovo senza guscio (=60 gr) ho aggiunto 40 gr di acqua (tot 100gr).
Quindi 60 gr di farina di grano duro e 140 di farina 0.
In pratica un mix di tutto!!!

Nel frattempo ho sbucciato una pera e fatta cuocere in un padellino con dell'acqua.
A cottura quasi avvenuta ho aggiunto 150 di gorgonzola e sbriciolato alcune noci e un po' di pepe.
Altri due minuti, giusto il tempo di far sciogliere il gorgonzola, addensato con del parmigiano grattugiato e lasciato freddare.

Al ripieno che avanza, ho aggiunto altri 50 gr di gorgonzola e altri pezzettini di noci per fare il condimento.

Cuocete, scolate e impiattate.

Un'abbondante spolverata di pepe ci sta bene:

metteteci anche un po' di polvere di cacao amaro...a mio avviso ci sta divinamente.....
