(ho preso una ricetta di sale & pepe e l'ho stravolta un pò!)

RICETTA: TIMBALLO IMPERIALE


Ingredienti

250 gr di pasta maritata
60 gr di noci
1 spicchio di aglio
3 uova
50 gr di burro
olio evo (8 cucchiai)
sale e pepe
200 gr di piselli già cotti
430 gr di farina
200 gr di strutto
80 gr di zucchero
1 uovo
1 pizzico di sale
3 cucchiai di acqua fredda
Procedimento

Nella planetaria, impastare lo strutto con lo zucchero (lo strutto dà una particolare morbidezza alla frolla), aggiungere l’uovo, il sale e l’acqua fredda e infine la farina. Mettere a riposare in frigo per almeno 2-3 ore. Se non avete la planetaria va benissimo anche fatto a mano. Passare al mix l’aglio, l’olio, le noci, il parmigiano, il sale e un pizzico di pepe fino ad ottenere una crema. Lessare la pasta al dente (basteranno 6-7 minuti di cottura), conditela con pesto di noci, con i piselli e con i tuorli delle uova precedentemente sbattuti. Incorporare gli albumi montati a neve. Foderare una teglia con la pasta frolla, aggiungere la pasta condita e mettere in forno a 180° per 25-30 minuti.
