Mi piace anche semplicemente con un pò di burro e parmigiano! Ne faccio in quantità industriale e poi la surgelo così ogni volta che ne ho voglia ce l'ho a portata di mano!!
Va scolata dopo pochi minuti, per mantenerla un pò al dente, callosa..buonissima!!!
Certo questa non è propriamente la stagione ideale per mangiarla, visto che sta arrivando il caldo, ma non importa!!! :) Io l'ho preparata comunque!!

Ingredienti
300 g farina di semola
stesso volume di parmigiano grattugiato
prezzemolo
3 uova

Procedimento
Impastare la farina con il parmigiano (quest'ultimo non può essere pesato, deve uguagliare la farina in volume), aggiungere le uova ed infine il prezzemolo tritato. Una volta finito di impastare il panetto di pasta, tagliarlo a fette e con un coltello (o una mezzaluna) sminuzzarle grossolanamente. Stendere la pasta su un piano infarinato e lasciar seccare.
Cuocere la cicerata per pochi minuti, condire con abbondante parmigiano e con il brodo caldo.
