TRIANGOLI ALLE MANDORLE E NOCCIOLE

Impastare 300 g farina, 100 g di zucchero, 2 uova, 130 gr di burro e un cucchiaino di lievito, raccogliere a palla, far riposare al fresco il tempo di preparare il ripieno; nel frattempo accendere il forno a 175°.

Fondere su fuoco basso 200 g di burro (io 150 gr) con 200 g di zucchero, 4 cucchiai d'acqua, aroma di vaniglia o cannella, fare dare il primo bollore, togliere dal fuoco e aggiungere 200 g di mandorle e 200 g di nocciole, entrambe tritate grossolanamente.

Stendere la pasta sottile in una larga teglia rettangolare foderata di carta da forno, cospargerla con 7 cucchiaiate di marmellata di albicocche, poi spalmarvi il composto di mandorle e nocciole. Cuocere 45 minuti circa. Lasciare raffreddare nella teglia, poi tagliare a quadrati (non più piccoli di 5 - 6 cm di lato, altrimenti si sbriciola tutto) e questi a triangoli. Se proprio si è supergolosi, si può intingere un angolo dei triangoli in cioccolato fuso...
