Molto bello. Ma mentre uso l'olio alla vaniglia per il pesce, da anni, non ho mai provato quello alla nocciola... come si fa? :) Sono tentata di provarlo con i ... come lo vedi?

Ingredienti per 4 persone
600 g di pomodorini datterino
600 g di seppie pulite
100 g di lattughino
1/2 baccello di vaniglia
6-7 cucchiai di olio evo
sale e pepe q.b.

Procedimento

Incidete il baccello di vaniglia e mettetelo in infusione nell'olio con un pizzico di sale e un po' d pepe e lasciatelo per circa 30'. Fate insaporire l'infuso a fuoco dolce in un pentolino per 5-6', lasciatelo raffreddare e filtratelo.
Lavate le seppie e lessatele in acqua bollente leggermente salata per 2-3', scolatele, fatele raffreddare e tagliatele a dadini. Condite con 1 cucchiaio d'olio.
Pulite, lavate e tagliate a dadini i pomodorini. Condite con sale e con un cucchiaio d'olio.
Pulite, lavate e tritate grossolanamente l'insalata. Condite con sale e con 1 cucchiaio d'olio.
Mettete un coppapasta su un piatto, distribuitevi dentro uno strato di pesce, uno di lattughino e terminate con i pomodori.
Sfilate il coppapasta e condite con il restante olio, pepe e guarnite a piacere.
