500 g di calamaretti freschi
un barattolo di pomodorini gialli
aglio fresco, un paio di spicchi
olio e.v.o. , di tipo fruttato intenso (io ho usato Olio di Centonze)
buccia di mezzo limone (io ho usato quelli della costiera amalfitana)
Pepe di Szechuan, macinato al momento
Origano fresco
Pochissimo sale grosso (ho usato quello di Cervia)

Innanzitutto, ho pulito velocemente i calamari. Poi li ho tagliati in anelli non troppo sottili. Ho messo quindi a soffriggere a fuoco basso l’aglio in un po’ di olio e ho aggiungo i pomodorini sgocciolati. Ho fatto andare a fuoco vivo qualche minuto, in modo da rosolarli leggermente, ed ho aggiunto i calamari .

Ho quindi portato a cottura in pochi minuti ed ho completato il piatto con una grattata di buccia di limone, una spolverata di pepe e qualche fogliolina di origano fresco.
