primo esperimento genovese col polpo
non ve lo racconto nemmeno

secondo esperimento brasato
un successone!

1.5 kg di muscolo di 2 taglio
4 carote
3gambi di sedano
2 cipolle rosse
anice stellato
grani di pepe
sale
olio extravergine d'oliva
2 bottiglie di aglianico

ho legato la carne
l'ho marinata con una carota ,un gambo di sedano, una cipolla tagliate a pezzetti, l'anti e stellato e qualche grano di pepe e una bottiglia di vino per circa 12/14 ore
l' ho scolato dalla marinata e l'ho Salato, pepato e rosolato in padella con il resto delle verdure tagliate a pezzi
ho filtrato il vino della marinata
ho cotto in slowcooker calda per circa 12 ore con le verdure rosolate il vino filtrato e l'altra bottiglia di vino, temperatura su high
dopo 12 ore mi sembrava cotto ma per sicurezza ho passato la temp su low per altre 6/7 ore
alla fine la carne era morbidissima e si scioglieva in bocca

il sughetto era rimasto un po' lento e l'ho dovuto restringere sul fuoco ma era buonissimo!
