Ingredienti

g.125 Burro pomata
g. 85 Zucchero a velo
g.100 Tuorli
g.140 Cioccolato fondente al 70%
g.250 Albumi
g. 95 Zucchero
g. 12 Farina 0 (facoltativa)

Preparazione

Montare a crema il burro assieme allo zucchero,incorporare i tuorli poco alla volta, e inserire per ultimo il cioccolato fuso a 40°C;agggiungere l'eventulae farina setacciata,montare gli albumi assieme allo zucchero,ed unire delicatamente le due masse.
spianare con l'aiuto della spatola, fermare con barrette in alluminio leggermente unte,cuocere a 170°C per circa 20 m,valvola aperta.
N.b.
noi abbiamo usato una teglia di dimenzioni 33 x 43x 1,5
ed abbiamo ricavato complessivamente n. 4 cerchi di diametro 16, quello che è rimasto l'ho abbiamo mangiato con la bavarese, una leccornia.
