é un risotto casereccio di facile esecuzione.
Passeggiando per le colline bergamasche mi hanno insegnato (i nativi del posto) a riconoscere un'erba che nasce in maggio e che se raccolta ancora tenera, é favolosa sia da abbinare ai primi piatti (risotto appunto) e/o da cucinare come contorno (spinaci erbette...), é un'erba dolcissima, purtroppo conosco solo il termine in dialetto: " i curnagìi "
Forse Isotta mi può aiutare nel riconoscerla: é di un verde chiaro e nasce a ciuffi sparsi qua e là nel prato...(misera descrizione..)
veniamo alla ricetta:

riso superfino carnaroli
olio EVO
cipolla bianca, aglio
curnagìi
burro
parmigiano

sbollentare (poco però) i curnagì in acqua salata e conservarla, nel frattempo fare un soffritto di cipolla ed aglio, buttarvi il riso e farlo tostare ben, bene (una buona tostatura determina la buona riuscita del riso) stando attenti a non bruciarlo; proseguire cominciando, a 'mestolate' ad aggiungere il brodo vegetale ancora caldo, salare e ad 1/3 della cottura aggiungere i curnagìi, terminare con un pochino di burro e parmigiano......
oppure 2 cucchiai di panna fresca (non ce l'ho fatta...qualcosa di goloso ce lo dovevo mettere.. :lol: )
Ah, una cosa importante; per un buon risotto utilizzare SOLO padelle in alliminio....
