e devo dire che e'uscito fuori un pane stupendo leggero come nuvole :smile: insomma sono moooolto soddisatta
ricetta:
BIGA di 18/20 ore di maturazione a temperatura 17°:
250 gr.manitoba
2.5 gr.lievito di birra
125 ml.acqua

IMPASTO:
250 gr.semola
125 ml. acqua
8 gr.lievito di birra
12 gr.sale
125 gr.patate lessate
6 gr.rosmarino tritato fine


ore 14 impasto biga e messa a lievitare
ore 09.00 del giorno dopo impasto la biga con la restante farina il lievito e l'acqua a vel.1 del k.aid dopo 5 minuti aggiungo ale rosmarino e patate passate lavoro ancora x 5 m.
faccio riposare 40 m.porziono a filoncini di 100 gr.,li metto a faccia in giu'x 10 m.sul tavolo infarinato poi li rivolto e li metto in teglia a lievitare a 28° x 50 m.
inforno a 220°x 20 m.
