Ulitmo acquisto: la cuisine de Rebuchon. Si tratta di ricette classiche, niente di fuori dal mondo ma ieri sera ho fatto la mia migliore crema di zucca 8O

Per due:
500g di zucca
mezzo litro di brodo
un po' di crème fraiche
1 cucchiaio di fecola
burro freddo (15g circa)

Tagliare a cubi la zucca e metterla sul fuoco con il brodo. Appena inizia a bllire contare 18 minuti e spegnere. Frullarla con il mixer.
Rimettere a bollire e schiumare. Stemperare la fecola con 1 cucch e mezzo d'acqua e unire alla crema sbattendo forte. Unire la panna (poca..).
Far riscaldare di nuovo. Unire il burro con il mixer a immersione. Regolare di sale e servire.

Viene una crema liscissima, lucida, delicatissima :smile:
Avrò scoperto l'acqua calda :oops:
