Gelatina al passito

450 gr di mele di montagna, l’ideale sarebbero state le “granny smith’ 350 ml di acqua, 500 g di zucchero700 gr. di buon passito aromatico.
In un grande tegame ho messo l’acqua e le mele, private solo del picciolo e tagliate in 4. Ho messo a sobbollire coperto, per circa mezz’ora fino a quando le mele si sono sfatte, ho mescolato bene con un cucchiaio di legno e poi filtrare il tutto, setacciando da un colino a maglie fitte e spingendo col dorso di un cucchiaio. Per ottenere una gelatina più limpida, ho ripetuto due volte quest’operazione attenendo circa 250 ml di composto, quindi ho rimesso tutto nel tegame ho aggiunto lo zucchero, il passito, .Ho fatto bollire e schiumato per eliminare le impurità. Dopo una mezz’ora, il ha iniziato a cambiare si è fatto più ‘denso’ho spento e attraverso un colino a maglia fittissima dove ho appoggiato una garza ho filtrato e invasato.





Sottoposta a cena ad alcuni amici cosi detti 'buongustai' hanno piacevolmente accompagnato con questa gelatina alcuni pecorini DOP.facendo spudoratamente il bis :smile:
