Metto anche una foto dei topinambur, che in Terronia c'e' anche chi non li conosce, mi sa. ;)

Poi, gli scialatielli crudi. Preparati con la del sito.

Ho messo dell'olio in un tegame largo, con un paio di spicchi di aglio, e l'ho fatto soffriggere. Poi ho tolto via l'aglio e vi ho fatto sciogliere 4 filetti di acciuga. Ho aggiunto i topinambur affettati con la mandolina e li ho fatti stufare a fuoco dolce.

Intanto, avevo preparato del olio aromatizzato pestando prezzemolo, aglio, una manciatina di piccoli capperi (nel mortaio) e diluendo con olio.

Cotti gli scialatielli, li ho ripassati velocemente in padella - spolverizzandoli appena tolti dal fuoco con pepe nero - e poi li ho serviti coprendoli con un po' di rondelle di tobinambur, ho condito con un cucchiaio di olio ai capperi, decorato con un'acciuga e un cappero e spolverizzato di prezzemolo tritato.
