SPAGHETTI CON LE UOVA DI RICCI


INGREDIENTI: 400 gr. di spaghetti
n° 200 ricci di mare
3 spicchi d'aglio
pepe e sale quanto basta
un mazzetto di prezzemolo,
olio d'oliva extravergine.

PREPARAZIONE: tagliate i ricci a metà, puliteli bene e prelevate le uova che sistemerete in un contenitore. Mettete sul fuoco una padella con dell'olio evo e fate soffriggere a fuoco lento l'aglio schiacciato, aggiungete il sale.
Mettete una pentola sul fuoco con l'acqua e portate ad ebollizione. Salate, calate gli spaghetti e fateli lessare molto al dente,scolate gli spaghetti prelevandoli dall'acqua della pentola con il forchettone lasciarli sgrondare bene dall'acqua in eccesso e metteteli direttamente nella padella con olio e l'aglio rosolato,spolverare di pepe macinato a mulinello(che avrete gia eliminato ). Mettete nei piatti,aggiungete quindi le uova dei ricci senza mescolare e spolverate con abbondante prezzemolo tritato . Serviteli caldissimi ognuno penserà a mescolare il prorio piatto.
