occorrente

2 kg. perini maturi
2 cipolle bianche
2 fese d'aglio
1 bel gambo di sedano con le foglie
3 o 4 carote grosse
prezzemolo
basilico
sale
2 cucchiaini di zucchero

procedimento

riempire una grossa pentola con tutti gli ingredienti sopra elencati, precedentemente tagliuzzati.


Senza aggiunta alcuna di olio, mettere sul fuoco bassissimo e coprire.
Il sale aiuterà il pomodoro a far uscire tutta l'acqua.
Non toccare nulla per almeno un'ora; dopodiché dare una mescolata ed andare nuovamente a coprire...
Lasciare sul fuoco fino a quando l'acua delle verdure si sarà asciugata (ca 3 ore intutto).
Lasciare raffreddare e passare tutto nel passaverdure.
Riempire i barattoli e utilizzarla come un normalissimo sugo per pasta...
E' ottima anche come accompagnamento per la cotoletta...! :D
