25g lievito di birra
Sciogliere il lievito nell'acqua calda (45° -50° ) e mescolare bene con una frusta. Aggiungere il sale al Breatl-mix e mescolare con il liquido. Impastare preferibilmente con l'impastatrice per 3 minuti a bassa velocità, poi 5 minuti ad alta velocità. Infarinare bene l'impasto e stenderlo sul piano di lavoro, coprirlo con un panno e lasciarlo lievitare a temperatura ambiente (22° circa) per 5-10 minuti. Con un cucchiaio ben infarinato staccare pezzi di uguale grandezza. Cospargere con farina e disporli su una teglia ricoperta con carta forno. Far riposare per altri 50 minuti ( in ambiente preferibilmente caldo e asciutto). Infornare a 230° in forno preriscaldato per 10 minuti, poi abbassare a 210° e lasciar cuocere ancora per 15 minuti. Nel forno termoventilato i tempi di cottura e le temperature devono essere adattati.
Con questa dose ne vengono 12 pezzi.

La ricetta è della Rieper, stampata sulla confezione della farina che ho acquistato oggi. A dire il vero avevo preso la farina per fare l'angelica con la ricotta al posto del burro, ma non ho resistito, adoro il pane altoatesino e spero sempre di riuscire a farne uno ... discreto :grin: . Oggi, dicevo, ho preso questa farina, Mix per Breatl, composta da farina di segale, di grano tenero tipo 0, madre acida di segale e spezie. Quindi esperimento in diretta :D . Se solo risultasse un decimo del profumino che emana....
