per la pasta
4 etti farina 00
4 uova intere
pizzico di sale

per il ripieno
8 etti ca di zucca (solo polpa)
4 frutti di mostarda
150 gr. di amaretti
1/2 bicchiere di liquore Strega (o amaretto di Saronno)
150 gr. di parmigiano
150 gr. pan grattato
sale e pepe

Preparare la pasta fresca e lasciarla riposare un paio d'orette (il riposo in realtà, fà lavorare la pasta);
nel frattempo mettere la zucca con la buccia in forno per 'appassirla' (io l'ho cotta al vapore);
riprenderla ed insieme a tutti gli altri ingredienti sopra riportati, metterla nel mixer, ottenendo così un impasto morbido ma consistente;
stendere la pasta e formare i tortelli come meglio vi aggrada (anche se la forma tipica é una sola, non é vero?);
condirli con un buon sughetto fresco di pomodoro e basilico (o come molti fanno, burro e salvia)
