Le dosi dei vari ingredienti non le ho messe visto che ho fatto tutto a occhio.

Ricetta Tortelli di Patate di Berceto

Per la sfoglia seguire la ricetta della sfoglia all’uovo…

Ripieno:
Cuocere le patate passarle al passaverdure.
Fare un soffritto con cipolla e olio di oliva aggiungere concentrato di pomodoro e acqua.
Questo sughetto serve per scottare il pane grattato che poi va aggiunto con le mani alle patate, alla noce moscata ed una bella manciata di grana, 1uovo e aggiungere sale e pepe a discrezione…
il ripieno deve avere una bella consistenza.

Sugo di funghi
Mettere ad ammorbidire in una tazza i funghi secchi con l’acqua tiepida.
Fare un soffritto di cipolla con olio evo aggiungere i funghi ammorbiditi.
Allungare mano a mano il sugo con l’acqua della tazza dove erano i funghi.
Aggiungere un po’ di concentrato di pomodoro, fare appassire bene il sugo.
Si usa aggiungere molta grana sui tortelli conditi ma questo va a gusti.A me piace sentire maggiormente il sapore dei funghi.
Spero di essere stato abbastanza preciso.
