Cannoli di porro e cernia su nido di agretti,
con crema di pinoli e porri croccanti.

Per i cannoli, ho frullato il pesce con 5 olive, un cucchiaio di capperi, poco aglio, pepe, olio, sale. Ho tagliato i porri in cilindri lunghi 10cm circa, li ho incisi sul lato, di modo da ottenere degli involucri. Ho selezionato i migliori e vi ho inserito un cucchiaio di ripieno per ognuno. Ho cotto i cannoli al vapore sulle foglie esterne del porro, aggiungendo nell'acqua due chiodi di garofano.

La parte interna del porro e parte del verde interno, è stata tagliata a listarelle e fritta in qualche cucchiaio di olio con del peperoncino, sale e pepe. Gli agretti semplicemente bolliti e conditi con un goccio di limone e un filiiiiiiiiiiiino d'olio.

Vorrei dedicare particolare attenzione alla crema di pinoli, che mi ha soddisfatto. Ho fatto tostare in padella i pinoli, li ho messi nel portaio e ridotti in polvere, ho aggiunto un paio di cucchiaio di olio mescolando e successivamente qualche cucchiaio di acqua di cottura degli agretti fino ad ottenre una cremina fluida, senza grumi.
