Ingredienti per una tortiera di cm 22 di diametro.

Alici di grossa pezzatura: kg 1,500
Olive bianche g 100
capperi sotto sale g 50
Uva passa g 50
Pinoli g 50
Pecorino piccante g 80
Cipolla 1/2 piccola
Olio evo
Aceto una spruzzata
Origano
Pan grattato per foderare lo stampo e spolverare la superficie dell'ultimo strato.
Niente sale

Preparazione

Eviscerare e diliscare le alici, possibilmente senza usare acqua. Otterrete circa 85o - 900 g di alici.
Denocciolare le olive e tagliarle e fettine
Tagliare a velo la cipolla
Intiepidire un po' di acqua e immergervi l'uva passa per farla riprendere.
Oliare il fondo ed i bordi della teglia, aiutandovi con della carta. Bisogna fare in modo che la teglia sia solo unta: le alici non devono galleggiare nell'olio.
Cominciare a stendere le alici a raggiera, sistemandole con la coda verso il centro della teglia e la con la parte della "pelle" che poggi sul fondo.
Spargere su ogni strato le olive, l'uva passa, i pinoli, i capperi, la cipolla ed il pecorino. Bagnare con un filo di olio ed una spruzzata di aceto di vino.
Procedere cosi' anche per il secondo strato.
A questo punto chiudete la torta con un terzo strato di mascolini con la parte della pelle verso l'alto. Quest'ultimo strato fatelo solo con due file di alici, in modo tale che il centro rimanga scoperto e lasci vedere la farcia del tortino. Spolverare con pan grattato e bagnare con olio evo.

Cuocere in forno a 170° per venticinque minuti
