Impasto 1/2 Kg di farina 00 con due cucchiaini di zucchero,70 g. di burro(o strutto,certe volte sbaglio volutamente e ne metto un pò di più )e circa 1/4 di l. di latte(certe volte aggiungo anche del marsala diminuendo il latte,ma io sono un pò quella del momento, vado molto a ispirazione) un pizzico di sale, sino ad avere un panetto morbido.

stiro la pasta normalmente con il mattarello,ma ultimamente ho qualche problema ai polsi,perchè non approfittare del mio braccio destro?

Lavoro la ricotta con lo zucchero passandola a setaccio, Albenghi non so cosa ne pensi tu io passo sempre a setaccio aggiungo cioccolato a pezzetti, passo a riempire la pasta formando i ravioli.

Li friggo in abbondante olio, l'ideale sarebbe lo strutto.

Spolvero di zucchero a velo, e lascio raffreddare!
Io li mangio anche tiepidi e Antonio certe volte ci vuole anche il miele sopra!
