l'impasto è quello del "pane pintau" ovvero pane disegnato fatto con semola 70%, farina 30%, acqua 40%, lievito madre; l'impasto deve restare bello duretto per poter essere lavorato, una volta impastato si prendono dei pezzi e si lavorano facendo forme classiche o particolari secondo fantasia. si mette l'uovo già cotto per evitare che la temperatura alta del forno lo rompa, si mette a cuocere come il pane per meno tempo trattandosi di pezzi piccoli.
