Per 4 persone, occorrono 4 carciofi di media grandezza di qualità romanesca come questi:

Una volta puliti, batterli un poco su un piano dalla parte del cuore. L'operazione faciliterà l'apertura del carciofo. Togliere le eventuali barbe, il "pelo" come lo chiamiamo noi romani.

Preparare nel frattempo il ripieno. Due cucchiai di pangrattato, due spicchi d'aglio, mentuccia (nepitella), da non confondere con la menta che per distinguerla viene detta romana, sale e pepe. Si può sostituire la mentuccia con del prezzemolo ma il gusto perde un poco.

Sistemarli a testa in giù ben stretti in un tegame ed irrorare di abbondante olio EVO ed un poco di acqua: deve risultare un dito di liquido sul fondo. Coprire bene e far cuocere a fuoco moderato per circa 30 minuti. Sono pronti quando la forchetta penetra facilmente nel gambo.
