Ho preso un pezzo di lonza con osso, forse meno elegante delle fettine fini che di solito si vede servire, ma vi assicuro, molto più gustosa.

Per 6 persone:

Un pezzo di lonza con l'osso attaccato, circa 700 gr., sale, pepe nero, salvia, riosmarino, fiore di finocchetto selvatico, olio extravergine di oliva.

Accendere il forno a 150°. Intanto prendere la carne e legarla bene.
Sul tagliere fare un battuto fine di salvia, romarino, pepe nero macinato al momento. Tritare molto bene con il coltello e aggiungere del fiore di finocchietto selvatico pestato finemente.

Massaggiare la carne con questo condimento, adagiarla in una teglia di alluminio, bagnarla di olio extravergine di oliva, versare sul fondo meno di un bicchiere di acqua fredda, un paio di rametti di rosmarino fresco e lasciar cuocere senza fretta per un'ora e un quarto la carne.

Tagliare le fette solo prima di servirle, badando bene che , almeno alcune di esse, abbiano la loro porzione di osso attaccato.

Per contorno, di solito, si saltano degli spinaci nell'olio dell'arista, aggiungendo uno spicchio di aglio in camicia.

Servirla anche tiepida o fredda, a patto di tenere caldo, in una salsiera, il sugo di cottura.
