Gennarino.org ringrazia tutti gli utenti che hanno dato fiducia al nostro progetto per quasi 20 anni, e che, grazie al grande lavoro fatto da tutto lo Staff (rigorosamente a titolo gratuito), hanno portato il forum a diventare uno dei principali punto di riferimento degli appassionati di cucina del web italiano.
Purtroppo, causa motivi personali, non ho più modo di gestirlo e portarlo avanti. Il forum viene ora posto in uno stato di sola lettura: un archivio storico che permetta a chiunque di fruire di tutte le discussioni trattate.

Ciao a tutti, eccomi di nuovo qui a chiedere il vostro aiuto :oops: ... ho voglia di preparare delle briochine soffici e leggere da riempire di crema ma non ho una ricetta che mi convinca più di tutte, anche perchè ho proprio voglia di sperimentare e fare nuove prove... :shock: Qualcuna ha una ricetta da consigliarmi?

Ma brioche di che tipo? Di pasta brioche? Di pasta brioche sfogliata? Croissant alla francese?
Se fai una ricerca trovi ricette di tutti i tipi, dovresti però prima capire che tipo di impasto vuoi fare. :)

La leggerezza dipende dall'idratazione e dalla lavorazione, è necessaria una planetaria... e allora anche quello che ti ho insegnato io verrà soffice come una nuvola. Poi dipende anche da una lievitazione perfetta! :)

Cara Luna hai del lievito madre? se lo hai puoi provare a fare le brioche che ho sperimentato da tempo.. un impasto veramente leggero.. ma io sono un po' di parte:
