Zuppa di Asparagi e Calamari

1kg asparagi
300g patate
200g carote
50g porri
50g sedano
200g zucchine
300g calamari
prezzemolo, basilico
burro
olio, sale, pepe

lavare gli asparagi e dividerli in tre parti: punte, parti centrali e gambi. fare un brodo mettendo a bollire i gambi i acqua fredda per 45 min.
preparare una crema facendo dorare il sedano e metà delle carote e delle zucchine tagliate a julienne; aggiungere le patate tagliate a listarelle e allungare con il brodo. quando sono cotte, frullare tutte le verdure con il prezzemolo per ottenere una crema.
a parte, saltare nel burro le carote e le zucchine rimaste, poi aggiungere le punte di asparagi e i calamari; cuocere per 10 min.
versare in ogni piatto un po' di crema, porre al centro la julienne di verdure e calamari, e condire con olio a crudo e basilico

é un po' laboriosa ma vale la pena!
