RICETTA: IL MEZZO PACCHERO CON TOTANI, PATATE E COZZE di Angelo D’Amico

Ingredienti (per 4 persone)

500 gr Totani (io non li ho trovati e ho usati i calamari)
240 gr mezzi Paccheri
500 gr Pomodorini del Piennolo
Aglio
100 gr Patate
200 gr Cozze
Prezzemolo e timo q.b
Peperoncino

Procedimento

Preparate una salsa di totani: prendete una casseruola, fate un soffritto d’aglio, peperoncino, prezzemolo e adagiatevi subito i totani prima che il tutto possa bruciare. Sfumate con un po’ di vino bianco, lasciate evaporare ed aggiungete i pomodorini tagliati in quattro. Aggiustate di sale q.b e ultimate la cottura. Aprite separatamente le cozze con olio e aglio, sgusciatele e tenetele da parte con la loro acqua. Preparate intanto le patate tagliate a cubetti da sbollentare leggermente in acqua e sale. Adoperate una padella alta ed ampia, spadellate le patate con aglio e timo, aggiungete la salsa di totani, le cozze e mantecate il tutto con i paccheri che avrete cotto al dente. Servite ben caldo guarnendo il piatto con foglioline di timo e qualche cozza.
