Filetto di tonno alle erbe e due pepi (kamomilla) 408/468 Kc

Questa ricetta si presta a due interpretazioni

Prima versione

Per 1 persona
200 gr di filetto di tonno in fette
2 cucchiaini d'olio EVO
erbe provenzali
pepe bianco e rosa

Mettere in marinata il tonno cospargendo le fette di filetto, con erbe provenzali pepe bianco e grani interi di pepe rosa. Tenere in marinata almeno un'ora. In una padella antiaderente, cuocere tre minuti per parte,
l'interno dovrà restare bello rosa. A cottura ultimata versare sopra i due cucchiaini d'olio e salare leggermente. Si può accompagnare con insalata. Si può anche tagliare a strisce di un cm di larghezza e presentare come una tagliata.

Seconda versione

Per 1 persona
150 gr di filetto di tonno
timo fresco
50 gr di fagioli cannellini secchi
2 cucchiaini d'olio
pepe bianco

Come nella precedente versione, mettere in marinata il tonno con un trito di timo fresco e pepe bianco. La sera prima, mettere in ammollo i fagioli cannellini. Farli bollire con un rametto di timo. Passarli al setaccio e disporre il purè di cannellini a specchio nel piatto di portata, sopra i filetti di tonno cotti tre minuti per parte come nella prima versione. Due cucchiaini d'olio Evo sul tutto.
