Hai ragione, la parola era sbagliata, intendevo friabili e porosi. Nel mio libro di Cucina Toscana (La Cucina Toscana di Giovanni Righi Parenti) menziona come provenienza un convento, ricetta poi adottata da Carlo Guerrini della fabbrica Parenti. Sono sicura che hai ragione tu, l'unica cosa che mi disturba e` che in questa maniera i miei non sono venuti porosi e un poco troppo "unti" all'interno. Forse dovrei utilizzare la farina di mandorle, ma se la utilizzassi il primo impasto sarebbe troppo slegato. Sai cosa ci vorrebbe? Un pasticciere senese con un bel video.
