Come promesso a Rossella, mi sono cimentata in questa ricetta tipica Ragusana...
"Coniglio alla Pattuisa" (ricetta di Ross..)
Ingredienti: un coniglio da circa 1,5kg. capperi gr.150 olive bianche snocciolate gr.150aglio gr.300 una cipolla affettata un cuore di sedano un mazzetto di prezzemolo 2 cucchiai di estratto di pomodoro un cucchiaio abbondante di cacao amaro cetriolini verdi gr.100 5 cucchiai di aceto due cucchiai di zucchero o miele sale pepe q.b. olio etrav.
Preparazione:
Pelare l'aglio a tagliarlo sottile,mettere a mollo i capperi ,tritare il prezzemolo e il sedano. In una padella fare asciugare il coniglio,aggiungere l'olio farlo rosolare e aggiungere il cacao,mettere da parte il coniglio e nella stessa padella aggiungere il battuto di prezzemolo il sedano l'aglio,la cipolla affettata capperi,le olive e i cetriolini ,fare rosolare quindi aggiungere l'estratto che avremo ammorbidito con dell 'acqua calda,salare pepare,unire il coniglio alla salsa e portare a cottura . A cottura quasi ultimata procedere con l'agro dolce.
Davvero ottimo, la miscela di agrodolce e cacao é splendida...
