Ciao Piero, confermo che i muffin vanno mescolati pochissimo. Io li amo molto e ho provato parecchie ricette, tra cui quella di Moka che però non mi ha entusiasmato. Ultimamente faccio sempre questi, li trovo spettacolari (soprattutto abcora tiepidi con una pallina di gelato). Li ho fatti anche con olio, buccia di limone e uvetta invece delle mele, sempre soffici e ottimi. Tra parentesi le mie note:

A can't-resist breakfast treat combines autumn's flavors: cinnamon, toasted nuts, and tart Granny Smith apples.
Ingredients

Vegetable cooking spray
1 medium Granny Smith apple, peeled, cored, and quartered (USATA TUTTA ME MEZZA MELA PER FARE I PEZZETTI, IN MEZZA DOSE)
1 cup sugar
2 cups all-purpose flour
2 teaspoons baking soda (USATO LIEVITO E POCO BICARBONATO)
1/2 teaspoon plus 2 pinches salt (SALE A OCCHIO)
1/2 teaspoon ground cinnamon (TRE SPRUZZATE DI CANNELLA SU MEZZA DOSE)
1/4 cup chopped walnuts, toasted (omit if serving to children under 3) (OMESSE)
2 large eggs
1 cup buttermilk, room temperature (USATI PER MEZZA DOSE 100 G DI LATTE SCALDATO, CON 1 CUCCHIAINO DI ACETO, POI SCOLATO E ALLUNGATO CON ACQUA, FORSE UN PO’ Più DI QUANTO INDICATO)
1/2 cup (1 stick) unsalted butter, melted (CIRCA 60 G PER MEZZA DOSE)
Directions
1.Preheat oven to 400 degrees. Spray a 12-cup standard muffin tin with cooking spray; set aside. Cut 3 apple quarters into 1/4-inch dice; cut remaining apple quarter into 12 thin slices for garnish.
2.Whisk together sugar, flour, baking soda, salt, and cinnamon in a medium bowl. Add diced apple and walnuts, if using; toss to coat.Whisk together eggs, buttermilk, and butter in a small bowl. Gently fold buttermilk mixture into flour mixture until just combined; do not overmix. Divide batter among muffin cups, filling each about three-quarters full.Top each with an apple slice. Bake until muffins are brown around edges and spring back when touched, 16 to 18 minutes. Let muffins cool slightly, about 5 minutes, before turning out of tin onto a wire rack. Serve warm or at room temperature. Muffins can be stored in an airtight container at room temperature up to 2 days.
COTTI A 200° PER 18-20 MINUTI

210g farina
210g zucchero
10g lievito per dolci
50g cioccolato fondente a pezzetti
70g cacao in polvere
1 bustina vanillina
150ml latte
3 uova
130g burro fuso
Ungere la teglia dei muffins e preriscaldare il forno a 190 gradi
centigradi.
In una ciotola setacciare con cura gli ingredienti secchi farina lievito
zucchero cacao e un pizzico di sale. In un'altra ciotola piu' piccola
sbattere 3 uova con il burro fuso il latte e la vanillina.
Unire il composto liquido a quello secco senza troppo mescolare (fino a
quando non c'e' piu' farina asciutta) e poi aggiungere i pezzetti di
cioccolato.
Riempire gli stampini della teglia per 3/4 ed infornare per 20-25 minuti
(controllare con lo stecchino la cottura).
